Cultural practices in the vineyard: respect for biodiversity

We carry out minimum tillage of our plots throughout the year. Every 2 years we add natural and well composted organic fertilizers to the soil. At the beginning of the year, we carry out a restrictive winter pruning in the Royat cordon style, to achieve the balance of the plant and programming a low yield. In spring, after sprouting, we carry out numerous manual interventions: green pruning, raising the canopy, trimming, clearing … Pruning, together with the respect for the auxiliary fauna and flora, intervening manually in the vineyard, will allow us to have healthy and strong plants that produce balanced fruits with a high concentration of aromatic compounds and polyphenols, as well as a quality ripening.

Vinification and elaboration

We harvest the grapes at the optimal time to maintain the freshness of the wine. The harvest is done by hand in boxes of 15-20 kg that are continuously transferred to the winery. We make a selection of bunches in the field and in the winery, to get only the best grapes. In the winery, we destem and gently press the grapes and the resulting must goes to our stainless steel tanks. Then we cold decant the must to make it clear. Fermentation lasted 1 week. Finally, the wine rested for 8 months on its lees.

Tasting notes

2022 has been a vintage influenced by drought and the heat at the time of harvest. This, together with our philosophy of work in the vines, has given us a Dulas Sur Lies 2022 that is concentrated but still subtle and full of freshness.

Pale at sight with greenish hues. On the nose, notes of citrus, white flowers, pears and freshly cut apples. In the mouth, fresh and rich with a pronounced minerality on the finish.
