Cultural practices in vineyards: respect for biodiversity
We carry out a minimum tillage of our plots throughout the year. Every 2 years we add natural and well composted organic fertilizers to the soil. At the beginning of the year we carry out a restrictive winter pruning in the Royat cordon style, to acheive the balance of the plant and programming a low yield. In spring, after sprouting, we carry out numerous manual interventions: green pruning, raising the canopy, trimming, clearing … Pruning, together with the respect for the auxiliary fauna and flora, intervening manually in the vineyard, will allow us to have healthy and strong plants that produce balanced fruits with a high concentration of aromatic compounds and polyphenols, as well as a qualiity ripening.
Vinification and elaboration
We harvest the grapes at the optimal time to maintain the freshness of the wine. The harvest is done by hand in boxes of 15-20 kg that are continuously transferred to the winery. We make a selection of bunches in the field and in the winery, to get only the best grapes. In the winery we destemme and gently press the grapes and the resulting must goes to our stainless steel tanks. Then we cold decant the must to make it clear. Fermentation lasted 1 week. Finally the wine rested for 8 months on its lees.
2020 has given us some good things, such as time and patience, which are reflected in this wine. It was bottled a few months later than it was planned and the flower yeast began to work on its own before wine release.
Pale at sight with greenish reflections. On the nose, an explosion of aromas: white flowers, pears and cut apples and pastries. Fresh and unctuous in the mouth, volume marked by aging on the lees and a persistent finish.
